Bon Appétit's Circle of Responsibility takes a macro view of wellness. A healthy environment, community and menu are all vital to the well being of our guests. We take responsibility for delivering choices in all of these areas for you.


Know What You Are Eating…

Bon Appétit is committed to offering you dietary choices that fit your goals and values. Our Circle of Responsibility program is designed to give you information about our kitchen principles and how they affect your environment, community and well being.

Components of the program include:
  • Informational Circle of Responsibility board
  • Brochures highlighting our commitments in the areas of environment, community, and well being
  • Well Being "This Month" news
  • Easy reference guide to icons defining food choices such as organic, vegetarian, vegan, etc.
  • Corresponding icons at the food stations
  • Training for our entire staff

To ensure the trustworthiness of the program, key chefs and managers at each location must complete extensive training and pass a certification exam before they can implement Circle of Responsibility.

With Circle of Responsibility, you can truly know what you are eating.


KNOW YOUR FOOD CHOICES

Look for icons throughout the café to find responsible choices:

In Balance - Contains a balanced portion of whole grains, fresh vegetables and lean protein with a minimum amount of healthy fats
Low Fat - 3 grams of fat or less for every 100 calories and entrée is less than 500 calories per serving
Vegetarian - Contains no meat, fish, poultry, shellfish, or products derived from these sources but may contain dairy or eggs
Vegan - Contains absolutely no ingredients from animal or dairy products
Farm to Fork - Contains ingredients purchased from a local farm or artisan and that are seasonal and minimally processed
Organic - Contains at least 95 percent organically produced ingredients (by weight) from an USDA certified source
Seafood Watch - Contains seafood that meets the Monterey Bay Aquarium's Seafood Watch guidelines for sustainable seafood


KNOW OUR KITCHEN PRINCIPLES
The following food standards have been created for the well being of our guests:

  • Menus are seasonal and regional
  • Vegetarian entrée available at each meal
  • Healthy nutritional choices at each meal
  • Salsas, pizza and marinara sauces are made from scratch
  • Stock and other sauces are made from scratch
  • Turkey and beef are roasted in-house daily for deli meat
  • Seafood purchased fresh when available. Hamburgers are made with fresh ground beef, not frozen
  • Olive and canola oils are used for salad dressings. We use canola oil in all fryers
  • Salad dressings are made from scratch, except nonfat and low-calorie dressings
  • Vegetables are prepared in small batches at the last possible minute for freshness
  • MSG is never allowed
  • Mashed potatoes are from fresh potatoes
  • Freshly squeezed lemon juice is used for cooking and sauces
  • Cookies and muffins baked fresh daily
